Creamy Rice Recipe

This is a very easy to make casserole. My toddler and preschooler love it, and so does my husband. It is Gluten Free. Just watch out if your Rice is labeled as Gluten Free. Also some canned corn and canned beans brand might contain wheat. But there are plenty of naturally gluten free brands out there.


Ingredients:

3 cups Water
1.5 cups Rice
2 tsp Salt
8 oz Sour Cream
1/3 cup Milk
1/2 cup chopped Onion
1 minced Garlic Clove
1 tbsp Coconut Oil
1 can Kidney Beans
1 can Kernel Corn
8 oz grated cheddar cheese

Directions:

1. Bring water to boil and add salt. Add Rice and lower the heat to very low, cover rice with tight-fitting lid and cook for 15-20 minutes (see direction on package)
Keep Rice in pan once finished cooking.
2. Meanwhile, combine the sour cream and milk and season to taste.
3. Heat the coconut oil in frying pan and add the chopped onion and garlic clove. Sautee for one minute and then add do rice.
4. Drain the can of corn and kidney beans and add to rice. Add the sour cream mixture and mix everything.
5. Spread the rice mixture into a casserole dish, add grated cheese and bake for 30 min in a 350 F degree oven.



Grocery Store Play Date

A play date all about shopping and groceries. My 4 year old loves to play shopkeeper with her 2 year old sister and her Daddy. 
This is how I came up with the idea about a Grocery Store Play Date. This is how our store looked like:

We have a lot of toy food. I sorted them in an extra shelf in categories. I also used real food in the form of cans.


The highlight was the bulk pasta. I put real penne and maccaroni in containers and I put paper bags out to fill them with the pasta.


You really don't need much. A little bit of food, a cash register, a shopping cart or baskets.
You can also use some toy money and an extra shelf to setup all the food. This is what I did.
The kids where so excited and couldn't wait for their friends to arrive. They had to start playing right away.


 
And don't forget about snacks for the hungry little ones, after all the playing. ;)
